52 Breakfasts: #14

One of you left me a comment another day saying I have quite un-breakfast-y stuff for breakfast, to which I admit. haha. I really do have stuff that people don’t usually have for breakfast for breakfast, all the time. I guess the most breakfast-y stuff on 52 Breakfasts thus far would be Breakfast #12: cereal + yogurt (and it wasn’t even the usual cereal + milk!).

You see, I usually don’t give any thought to whether it’d be unusual to have this or that as breakfast. I just come up with whatever I feel like eating or cooking.

Also, one of my objectives in starting this 52 Breakfasts project was to make sure I have something good for breakfast at least once a week. And whenever I think of having something good, I usually end up with something a tad too heavy for breakfast, thus the un-breakfast-ness in my 52 Breakfasts series.

Anyway, I had yet another un-breakfast-y breakfast today. Pasta with eggplants and mushroom!

For foodies, here’s how I prepared it.

1. Add oil, sliced garlic and dried chili to nonstick pan over low heat. Don’t let the garlic brown too fast cos we want that garlic taste to sip into the oil which will later sip into the eggplants and mushrooms!

2. Add in sliced eggplants and mushrooms. Keep the heat low.

3. Turn up the heat a bit. Add boiled pasta.

4. Lastly, add salt and pepper and parsley.

5. Dig in!
